Sylvain Saux makes this very lightly sparkling red from an old vineyard on the outskirts of Carcassonne.

He places whole bunches into tank, allows the ferment to start, presses it off and runs the wine in to bottle with a small amount of remaining sweetness so that the ferment will continue on bottle and create some light petillance.

The fruit is dark and delicious, the fine bead is totally refreshing and the final wine is a big winner.

Serve from the fridge for a fine, fine time.
