2015 Weingut Schnabel Hochegg Morillon (Chardonnay)

Karl Schnabel is one of the greatest farmers we have met. He and his family are based in Styria, in the far south of Austria, about 10kms north of the border with Slovenia and they farm five extraordinary hectares on the famous Sausal mountain.

Their wines are essential. They're farmed and vinified with an enormous amount of love and precision the terroir is among the remarkable I've visited.

This cuvee is Morillon (chardonnay) from Karl and Eva's incredible vineyard Hochegg. This is the most elevated of all of their vineyards and receives less afternoon sun than the Koregg parcel.

This wine is fermented on skins, allowed to evolve for almost a year in barrel and then very gently run to bottle. The colour is amber and the fruit profile is profoundly mineral.

We love this wine with protein though it's also incredibly delicious without food and like all of Karl and Eva's wines is it absolutely unmissable.

Serve cool - 15-16C is perfect.
